 A patriotic mocktail

red white blue kiddie cocktail1 223x300 A patriotic mocktail for the kids!

Not only is this a showstopper for the kids this 4th of July weekend, it’s a built-in science lesson! Mama, how do the liquids stay separate? they’ll ask. In your best Bill Nye the Science Guy voice, tell them the secret is in the sugar! It separates by keeping the drink with the highest sugar content on the bottom, and the least on top.

Make sure to add ice with each layer; it helps with the separation. And if you’re supermom, make star-shaped ice cubes!!

4th of July Kiddie Mocktails
Adapted from Family Fun. Makes 1 12-ounce (tall) glass.

3 ounces fruit punch
3 ounces blue Gatorade (not sugar-free)
3 ounces diet 7-Up or Sprite (must be sugar-free; so diet only)
ice

Fill glass 1/3 full with ice cubes. Pour fruit punch almost (but not quite) to top of ice cubes. Fill another 1/3 with ice cubes and slowly pour blue Gatorade almost to top of cubes. Fill final 1/3 ice cubes and slowly pour sugar-free Sprite. Add straw and voila!

Lemonade with Berry Ice Cubes From FamilyFun

This lemony, tangy drink gets sweeter, and prettier, as the cubes melt.
Ingredients 1 11.5-oz. can frozen concentrate strawberry or any berry mix juice
24 raspberries or 8 strawberries, sliced (optional)
2 quarts water
1 1/3 cups sugar (or more, to taste)
1 1/3 cups fresh lemon juice
8 lemon slices
8 mint sprigs

Instructions Pour the juice concentrate and 1 can of water into a pitcher. Mix to combine, then pour the juice into two ice cube trays, adding raspberries or sliced strawberries if you wish. Freeze. Combine the 2 quarts of water and the sugar in a medium saucepan. Bring to a boil and stir to combine. Reduce to a simmer and cook until the sugar is dissolved, about 1 to 2 minutes. Remove from heat. Strain the lemon juice through a fine sieve into the sugar syrup. Chill. Slit each lemon slice once, from center to rind, then press the slits onto eight glasses. Fill each glass with 3 berry ice cubes and the lemonade. Garnish with a mint sprig. Makes 8 glasses.

Piña Colada Cupcakes

You can make the cupcakes a day ahead and the topping as well which should be stored in the refrigerator. Once you top them with the frosting they should be eaten within a few hours.
