Ingredients:

  • 1 Tablespoon Oil
  • 6oz. Fideo Pasta (I purchased 1 12oz. bag and used 1/2)
  • 1 Small Onion (Chopped)
  • 1 Teaspoon Minced Garlic (or garlic powder)
  • 1 8oz. can Tomato Sauce (Blend with Paste)
  • 1 Tablespoon Tomato Paste (Blend with Sauce)
  • 2 & 1/2 Cups Water
  • 1 Tablespoon Caldo de Pollo (Powdered chicken broth)
  • Optional: 1 Cup Shredded Chicken Breast

 

Directions:

  1. Heat pan medium to low heat & add 1 Tablespoon oil
  2. Once oil is heated, place the fideo pasta in pan. Then add Onions & Garlic.
  3. Saute until fideo pasta becomes a golden color (Stir pasta continuously with a spatula to prevent from burning)
  4. Once fideo pasta is golden, add Tomato Sauce & Paste mix
  5. Add Water (Water should cover pasta, but not make color of sauce/liquid pink. Coloring should be an orange/red shade)
  6. Immediately add Caldo de Pollo
  7. Bring to a boil
  8. Cover Pan at a low heat
  9. Taste and add salt if needed
  10. Fideo should be done when thickened (approximately 20 minutes)

no its a soup..some people use the shells to make it..i like the fideos noodles better...they kinda remind me of vermicilli..actually i think thats what it is..but i buy them at the mexican store so the package doesnt say english name

oh !! we only have a little mexican store in town and is not very clean but I'm goint to check the international part in the big stores..

 Me and my family love fideo.  It's so quick and yummy and it's comfort food because my mom made it all the time too.
