We are having company on Sunday and the kids requested hamburgers and potato salad. I'm pretty basic with my potato salad, just potatoes, eggs, green onion and mayo (with a little squirt of mustard.)
What do you do to make you potato salad different? I have seen recipes with LOTS of things in it. Do you add more stuff to yours?
I like your basic recipe. I just add red & green bell peppers, yellow onion & a capful or 2 of vinegar.
I usually omit the mustard for my basic, but have added a sauce I make combining mayo & ketchup & it comes out pinkish for another variety.
I love potato salad but not my family .. if I made some I like to use a little mustard too :)

Yours sounds a little zippier. My mom always made it plain so that's how I grew up liking it too...but I think my Mexican hubby would like more spice and zip to it.

I put relish in macaroni salad. In mac salad I DO zip it up a bit and put more flavors.

I'd like the addition of the red and green peppers. It would be a pretty salad too that way.
