Dinner of the Week 7/25/12

I know soup is not a usual summer meal but on Mondays, Tuesdays, and Thurdays its easy dinners around here due to football practices.  My boys are not big soup eaters but this is one we all agree on and love.  The fact that it cooks in the crock-pot and requires so little from me makes it even better.  For dessert we will be having ice cream - cookies and cream for me :)  Do you have a favorite tortilla soup recipe??  Ice cream??

 That looks yummy.  We like soup but I feel they need SO much salt that I don't bother too often with them.

This one doesn't call for salt and uses low sodium broth.

Please share your recipe!   I have never made tortilla soup- only store bought :/

It was so good! I used taco seasoning I added black, pinto and kidney beans and some fresh tomatoes and cilantro. Oh and I had a side of lettuce and avocado. Ill post my pics in a while
