Cube Steak French Dip Sandwiches, Sweet Potato Wedges

4 cube steaks 1 pkg. dry onion soup mix 1 loaf French bread
Season cube steaks to taste and brown in a Pam sprayed skillet. Add 2 cups of water and package of onion soup mix. Simmer at least one hour until meat is tender.
A few minutes before serving I like to add some freshly sliced onion and heat until it is tender. Cut bread into 4 servings. Slice and add meat and onions to make a sandwich. Put gravy into a small bowl at the side of each serving and "dip" and enjoy. |

I was a little disappointed here....tasty, but the cube steaks cooked down so small that we didn't really get enough meat on our sammies. I don't eat bread much either so pulled off half of that.
I was hungry later and went and bought a Wendy's berry salad with fat free raspberry vinaigrette. That was delicious.

I didn't know what else to do with those cube steaks except parmigiana style or chicken fried steak.

Mine too. Maybe if we pre-cooked the meat for a while before dipping them in the breading and frying them??? Wonder if that would work better....
Then I stuff my Chile with meat and mozzarella cheese. (I sweat my Chile and peel the skin and remove all the seeds before stuffing)
