Hamburger Supper Casserole

Ingredients
- 1 pound ground beef
- 1 1/2 cups water
- 1/2 teaspoon poultry seasoning
- 1/4 teaspoon pepper
- 1 (.75 ounce) packet dry brown gravy mix
- 1 medium onion, sliced and separated into rings
- 1 medium carrot, sliced
- 2 medium potatoes, sliced
- 1 cup shredded Cheddar cheese
Directions
- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the water, poultry seasoning and pepper. Bring to a boil. Stir in gravy mix. Cook and stir for 2 minutes or until slightly thickened.
- Arrange the onion, carrot and potatoes over beef. Reduce heat; cover and simmer for 10-15 minutes or until vegetables are tender. Sprinkle with cheese. Cover and cook 3-5 minutes longer or until cheese is melted.
This takes a lot longer to cook than it says. What I do for this dish is to microwave the vegetables before getting the meat ready.
I have also assembled it the night before in a casserole dish and baked it the next evening.
It's very yummy.
We had baked potato with a little butter on top. Honey-Orange Marinated Salmon. And spinach salad with grape tomatoes and a little thousand island dressing.

Here's the recipe for the Honey-Orange Marinade.
1/3 cup reduced sodium soy sauce
1/4 cup orange juice
1/4 cup honey
2 green onions, thinly sliced
1 tablespoon olive oil
1 tablespoon apple juice
1 tablespoon minced fresh ginger root
Combine all ingredients in a resell able plastic bag, add the salmon and refrigerate for 1 hour, turning a few times.
Line a baking pan with foul and coat with nonstick cooking spray. Drain and discard marinade. Place salmon in pan and bake at 350 degrees F for 30-40 minutes or until fish flakes easily with a fork.
***personally, I put the salmon in the baking pan and poured the marinade over it instead of discarding it, so the fish wouldn't dry out. and, I baked at 400 degrees for about 25 minutes max. for time efficiency.
