2 zucchini
1 16 oz can diced tomatos
Handful of muchrooms, diced
Handful pizza sliced pepperoni, cut in 4ths
Couple handfuls parmesana
Couple of shakes oregano
Couple of shakes basil
Couple of shakes garlic powder
Salt to.taste
Sate mushrooms and zucchini for a few mins, add remaining ingredients and cook medium high until all is tender and tomato water evaporates.
Serve as a side.
I'm looking for more zucchini recipes now too....but there is too much in this one that I don't like. I have found that oregano and basil are just NOT to my liking and pepperoni we don't eat.
