Here's My Dinner----What's Yours? 8/22
Pineapple Ham Casserole
1 canned pineapple - chunks drained, reserve 1/2 cup juice
1/2 cup real Mayonnaise
1 teaspoon table salt
1 teaspoon prepared mustard
1/4 teaspoon fresh ground peppercorns
3 cups cooked white rice, I like the Basmati Rice
2 cups baked ham - cooked and cubed
1/2 cup green peppers - chopped
1/2 cup green onions - chopped
1 1/2 cups shredded Gruyere Cheese - 1/2 cup reserved for topping (Swiss Cheese works great too)
In large bowl, mix together mayonnaise, pineapple juice, salt, pepper and mustard stirring well.
Add cooked basmati rice, baked ham, green peppers, green onions, pineapple and 1 cup Gruyere Cheese or Swiss Cheese, mix well.
Pour mixture into large greased baking dish.
Top with 1/2 cup Gruyere Cheese or Swiss Cheese.
Bake at 350 F for 10 minutes or until heated through and top is lightly browned.
Makes 6 servings - So EASY!
