
1. Poodle’s Special Egg Salad Mix together: 12 hard boiled eggs, chopped, 2 diced Tomatoes, ½ cup minced Celery, ¼ cup Chopped Black Olives, 4 slices chopped Bacon, 1 tablespoon Minced Green Onions, 1teaspoon Pickle relish. Mix in: Mayonnaise, Mustard, salt and pepper to your taste Lay a lettuce leaf on top of toasted, buttered sourdough bread. Top with the above mixture. Serve open faced and eat with a knife and fork.
This turned out REALLY REALLY good. It's a recipe I created myself to bulk up egg salad enough to be a meal. I will definitely be making it again!
