Hot Potato, Hot Potato ~ Papa Caliente, Papa Caliente

I love potatoes of all varieties.  In the morning we love having home fries.

Home Fries

• 2-3 large potatoes sliced into round cirlces or diced into cubes.
• Boil potatoes with a dash of salt for 5-7 mins (slightly tender)
• in a non-stick frying pan heat olive oil
• toss chopped up bell peppers (both red & green) & a chopped small onion 
• stir fry the veggies till tender.
• drain potatoes & add to frying pan with med. to high heat
• mix  & press down the veggies & potatoes firmly
• cook for 10 mins, until crisp
• flip & cook on the other side
• serve with your favorite eggs
• Enjoy!
  

 I love potatoes I mostly eat the Idaho, Red, and Sweet potatoes.  I really don't have too many potatoe recipes but I eat them mostly mashed or baked.

I buy red more often and I also make sweet potatoes with piloncillo

I like to make the red ones roasted int he oven.  I cut them in wedges, coat them in olive oil then I add salt, pepper & rosemary to them.  Yummy!

Bendito.  Why you hating on the poor little sweet potatoes?  They are so good when made as a casserole with marshmallows, brown sugar & candied pecans.
