2 tbs of Sofrito
2 tbs of Olive oil
1 small can (15 oz) of Gandules
3 cup of long grain white rice
5 1/2 - 6 cups of water
½ can of tomato sauce
¼ tsp salt
1 packet of Sazón with Coriander and Annatto
A few pieces of cooked pernil (roasted pork) or boneless pork ribs
Roasted Red Pimentos for garnish
Large Green banana leaves for flavor
In a large pot heat olive oil, add sofrito & sauté on med. Heat (5 mins). Add can of gandules, pork, tomato sauce & sazon & salt. Rinse rice in a colander (until water is no longer starchy looking) & add to pot. Stir & make sure rice is thoroughly coated with sofrito & gandules. Add water. To assure you have just the right amount of water, dip the handle of your mixing spoon into the pot. Water level should be an inch up on the handle. Turn up heat, leave pot uncover & allow water level to evaporate until it meets the level of the rice. Once the water evaporates, stir & turn down the heat to the lowest setting. Place a few strips of pimentos on top & cover with big banana leaves. Cover the pot tightly. In 15 mins stir again & recover. Allow rice to cook an additional 15 mins. Enjoy!

I have never heard of pigeon peas! Are they called by any alternate name?
