8 ounces90%-lean ground beef,

1 cupbroccoli florets, finely chopped

1 cupshredded reduced-fat Cheddar cheese, divided

1/2 cupreduced-fat sour creamsee savings

1/2 teaspoonsalt

1/4 teaspoonfreshly ground peppersee savings

3scallions, sliced
Pierce potatoes all over with a fork. Place in the microwave and cook on Medium, turning once or twice, until the potatoes are soft, about 20 minutes. (Or use the "potato setting" on your microwave and cook according to the manufacturer's directions.)

This turned out very yummy! I used Veggie burger crumbles instead of beef and I made a cheese sauce instead of just the shredded cheese I also added a little turkey bacon to the top. Here is a pic of my hubby's plate---he sprinkled more cheese on top---too much if you ask me! lol

I made short ribs, rice and salad. Your dinner looks delish.
